Turkish Recipes | Rice with Anchovies Recipe from Northern Turkey | Step By Step Recipe | How to cook Anchovies | Sea food Recipes | Turkish Recipes Ingredients 2.2 lb (1 kg) of anchovies 4 tbs. of vegetable oil 2 tbs. of dry currants 1 teaspoon of cumin 15 branches of parsley 2 teaspoon of salt 2 tomatoes 1.5 cuos of rice 3 tbs. of corn flour 2 tbs. of olive oil 1/2 teaspoon of black pepper Preparation Take the bones out of anchovies and wash them wall. Add 2 tsp. of salt and mix it well. Roast a finely chopped onion in 4 tbs of vegetable oil. Add the grated tomatoes. When it cooks, add the rewashed rice, finely chopped parsley, prewashed currants, salt, black pepper and cumin. Finally add 1,5 cup of hot water and put the lid on. Leave it for cooking. When the rice soaks all the water in, you can tell it is ready. Choose a deep,glass tray. Oil it with a tbs of olive oil. Dip the anchovies in to the corn flour and tray placing them in to the tray, with their skinned side turned out. Cover all around and bottom of the tray with the anchovies. Now fill the tray with the rice mix you prepared earlier. Make it flat and cover the top with more anchovies. (don't forget to dip each one in to the corn flour) Spread a tbs of olive oil on the top when its done. Cook in pre-head oven for around 35 minutes, on 360 F (180 C) Serve immediately! Bon Appetit!

Peru is home to one of the world’s largest single stock fishery – the anchoveta – a species related to anchovy used in fishmeal for livestock and aquaculture around the world. Its harvest touches many lives. Reform of the anchoveta fisheries, supported by the World Bank starting in 2009, put a break on overfishing which was threatening the viability of a crucial resource. In the process, some fishermen like Jose Luis lost their jobs and had to strike a new path. Today, the reform has resulted in a more sustainable, resilient and profitable industry but Peru still faces challenges when it comes to regulating other types of fishing. CLEAN THE ANCHOVIES BY PULLING THE HEAD DOWNWARD TOWARD THE BELLY OF THE FISH FROM THE GILL FLANGE THIS WILL REMOVE THE HEAD AND THE GUTS. 2. THEN WITH YOUR FINGER YOU CAN SPLIT THE ANCHOVY THE REST OF THE WAY DOWN AND RINSE THEM WELL. 3. THEN YOU REMOVE THE SPINE FROM THE TAIL SECTION OF THE ANCHOVY USING YOUR INDEX FINGER AND THUMB AND PULL THE SPINE DOWNWARD TOWARD THE HEAD TO REMOVE THE SPINE COMPLETELY. 4. NOW LAY THE ANCHOVIES OUT IN A GLASS BAKING DISH AND ADD ENOUGH RED/WHITE VINEGAR TO COVER THEM. 5. DEPENDING ON HOW BIG THE BAKING/CASSEROLE DISH IS YOU MAY HAVE ONE OR MORE LAYERS OF ANCHOVY TO COVER WITH YOUR VINEGAR. 6. PUT A COVER OR USE PLASTIC WRAP TO COVER THE ANCHOVIES AND PUT IN REFRIGERATOR FOR A MINIMUM OF 5 HOURS AT ROOM TEMPERATURE TO COOK IN THE ACID OF THE VINEGAR. IF YOU WANT TO BE ABSOLUTELY SURE THEN MARINATE 12-24 HOURS IN THE FRIDGE. 7. WHEN READY TAKE THE ANCHOVIES OUT OF THE FRIDGE IF YOU PUT THEM THERE AND DRAIN THE VINEGAR FROM THE BAKING DISH. LAY THE FISH ON A CUTTING BOARD AND DRY THEM WITH PAPER TOWELS OR CLEAN DISH TOWEL. 8. PLATE THE ANCHOVIES IN A DECORATIVE FASHION ON THE PLATE. 9. NOW TAKE A LITTLE OF YOUR MINCED GARLIC AND RUB A TINY BIT ON EACH ANCHOVY. 10. NOW SPRINKLE THE ANCHOVIES WITH SOME SEA SALT, BLACK PEPPER, RED CHILI FLAKES AND CRUSHED OREGANO AND AN OPTIONAL LEMON SHPRITZ.. 11. NOW DRIZZLE SOME EXTRA VIRGIN OLIVE OIL OVER THE ANCHOVIES AND SERVE. OPTIONAL: ADD SOME CAPERS TO THE PLATE BEFORE DRIZZLING OLIVE OIL ON TOP. OPTIONAL: ADD SOME SLIVERED ONIONS TO PLATE BEFORE DRIZZLING WITH OLIVE OIL.(THIS IS MORE THE WAY THE SPANISH MAKE MARINATED ANCHOVIES CALLED "BOQUERONES." NOTE: MAKE SURE THERE IS ENOUGH OLIVE OIL ON THE PLATE OF ANCHOVIES SO THAT YOUR GUESS CAN SPOON SOME OF THE OIL ONTO THEIR PLATES WITH THE ANCHOVIES AND GIVE THEM SOME BREAD TO MOP THE PLATE UP WITH. Turkish cuisine (Turkish: Türk mutfağı) is largely the heritage of Ottoman cuisine, which can be described as a fusion and refinement of Central Asian, Middle Eastern and Balkan cuisines. Turkish cuisine has in turn influenced those and other neighbouring cuisines, including those of Western Europe. The Ottomans fused various culinary traditions of their realm with influences from Middle Eastern cuisines, along with traditional Turkic elements from Central Asia (such as yogurt), creating a vast array of specialities—many with strong regional associations. Turkish cuisine varies across the country. The cooking of Istanbul, Bursa, Izmir, and rest of the Aegean region inherits many elements of Ottoman court cuisine, with a lighter use of spices, a preference for rice over bulgur, and a wider use of seafoods. The cuisine of the Black Sea Region uses fish extensively, especially the Black Sea anchovy (hamsi), has been influenced by Balkan and Slavic cuisine, and includes maize dishes. The cuisine of the southeast—Urfa, Gaziantep and Adana—is famous for its kebabs, mezes and dough-based desserts such as baklava, kadayıf and künefe (kanafeh). Lebanese cuisine includes an abundance of starches, whole grain, fruits, vegetables, fresh fish and seafood; animal fats are consumed sparingly. Poultry is eaten more often than red meat. When red meat is eaten it is usually lamb on the coast, and goat meat in the mountain regions. It also includes copious amounts of garlic and olive oil, often seasoned by lemon juice.; olive oil, herbs, garlic and lemon are typical flavours found in the Lebanese diet. Most often foods are either grilled, baked or sautéed in olive oil; butter or cream is rarely used other than in a few desserts. Vegetables are often eaten raw or pickled as well as cooked. Anchovy Caesar Dressing Servings: 6 - 8 INGREDIENTS 60g anchovies 60g dijon 10g raw garlic 100g roasted garlic 75 mls fish sauce 5g miso paste 5g ground black pepper 54g egg yolks 250ml canola oil 125mls red wine vinegar PREPARATION 1. In a blender, mix top 8 ingredients on low until combined. 2. Slowly add canola oil into the mixture while blending, then add red wine vinegar. 3. Emulsify dressing/ 4. Prepare salad of choice (we used broccoli salad) and toss dressing through with hands. 5. Grate fresh parmesan on top and add toasted breadcrumbs (optional) 6. Serve with lemon wedge. Enjoy! A specialty's name sometimes includes that of a city or region, either in or outside of Turkey, and may refer to the specific technique or ingredients used in that area. For example, the difference between urfa kebab and adana kebab is the thickness of the skewer and the amount of hot pepper that kebab contains. Urfa kebab is less spicy and thicker than adana kebab.
