Southern Fried Corn12 ounces of fresh or frozen whole kernel corn 3 slices of bacon 1/2 red bell pepper, diced 1/2 onion, diced 1 teaspoon flour 1/2 cup of milk 2 Tablespoons fresh parsley, chopped salt and Pepper to taste Here's what you need to do: In a large skillet, brown the 3 slices of bacon.  Remove the bacon and drain the bacon on paper towels. Leave the bacon drippings in the skillet.  To the skillet with the bacon drippings, add the corn, onions and red bell peppers.  Saute over medium high heat, stirring occasionally until the corn begins to brown.  Add the flour. Reduce the heat to medium low and continue cooking for a few minutes, just long enough to cook out the "flour" taste.  Stir in the milk.  Add the parsley.  Continue cooking over medium low heat until the corn thickens up. Add salt and pepper to taste. To serve, you can either crumble the bacon and top the corn with the bacon bits or just stir the bacon bits right into the corn. All that's left to do is to enjoy this wonderful southern summertime favorite! When I was growing up, my granny was my favorite cook. My mama was an amazing cook as well, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. She had a kitchen that was about 10x12 . She had a round table in the center. There was never a time when there wasn't something on that round table that we could eat. She made a pan of biscuits every day and a pawn of cornbread. She grew almost everything she made in the garden and canned many of her foods. She had a smoke house and that is where she stored her sweet potatoes and her russet potatoes. Granddaddy took the corn (field corn) that they grew to the feed mill every year so she had her own homemade cornmeal. If you want to learn how to cook like this woman, all you have to do is watch my southern cooking tutorials and you will become one of the best Southern cooks around. Your family and friends will love everything you make, and you will have more company and more company means more love in your home and heart! Thank you so much for being a part of this dream of mine. I want everyone to enjoy the same flavors and types of food that we (our family) grew up eating. I have made it so easy for you to learn how to cook like my granny and mama did with cooking tutorials for each and every recipe in our cookbooks. You can see how to order these by scrolling down in this description post. Oh and no difficult to find or crazy ingredients! Just simple ingredients and really good food. Hey yall!, it’s Tammy with Collard Valley Cooks! I am a southern girl born in raised in Collard Valley in Polk County Georgia. My entire (Benefield) family had around 125 acres and we mostly raised cattle. We raised our own corn for feed so it was field corn. We also raised our own hogs for sausage and bacon, and of course our own beef. We feed our beef seed before sending them to the butcher so the meat would be delicious. Not sure why everyone wants grass feed beef and free-range chickens. They really do not taste as good as those feed with feed. We had a large family and when I was young all of daddy’s brothers and sisters lived in the valley around his parents. It was a great place to grow up with lots of things to see and do all around. Country people like us love the smell, beauty and fruit of the land. Daddy coon hunted for fun, and we watched our tv together in the living room at night while mama watched her soap operas during the day. We went to church on Sunday, school during the week, the grocery store on Friday’s and that was our life. No vacations, no camping, just plain old southern country people. Creamed Corn (Fried Corn) 6 EARS FRESH CORN 1 1/2 CUPS WATER 1 TSP. SALT 1/4 TSP. PEPPER 2 CUPS MILK 3 TBSP. BUTTER OR MARGERINE Shuck your corn. Brush it with a vegetable brush to remove silks. Cut it off cobb with very sharp knife. Start at the top and cut downward into a wide bowl while resting the cobb on the bottom of bowl. Rotate cobb while cutting. Try to cut it thin enough to do two rows. After cutting off kernels scrape the cobb. Add corn, water, salt, pepper, milk and butter to a large wok or skillet. Turn on high and cook until water evaporates off corn. About 5-8 minutes. Field Corn “My family planted field corn every year to make cornmeal with. They also used it for feeding the animals. Many farmers eat field corn as well. We sure did. You cook and prepare it the same way as the corn above. Field corn is ready when the tassels are very light golden brown. It gets hard quick so there is a short window for picking. It doesn’t have any sugar in it and it is so very good with fresh fried okra and sliced garden tomatoes.”

Grilled Mexican Corn Salad | Southern Living

01:01
Elote, Mexican-style street corn, inspired this tangy, smoky, slightly creamy side dish. Three jalapeños give this salad a real kick; make it milder by substituting mini sweet peppers. Grab a few ears of sweet corn and some fresh herbs from your local farmers' market to pull together this savory side dish. Serve this salad by itself at a cookout or alongside grilled flank steak and warm tortillas for an easy taco night. Want to see more Southern Living videos? How To Make Creamed Corn

01:27
There are a few essential ingredients for delicious creamed corn: the freshest cobs, a handy corn creamer, and time. Don't worry, this Southern classic is well worth the wait. Get the creamed-corn recipe here: http://www.southernliving.com/food/how-to/how-to-make-creamed-corn-video See more from our test kitchen here: http://www.southernliving.com/food/how-to Creamed Corn is a Southern Classic and there are a few tricks to making it well. Start by getting your hands on the freshest corn you can find. Then, make sure you not only use the kernels but the corn milk that’s hiding in the cob. We love this Norpro corn creamer - it does all the work for you! To use it, simply run your cobbs along the blade over a bowl to catch the kernels and the milk. To make great creamed corn, you need time. Slowly cook the corn and corn milk over low heat to bring out all the flavor and natural starches. Cook it this way for about 30 minutes, then finish it with a little cream, butter and salt. Delicious.
