Fresh apple juice or sweet cider is considered to be the product of sound ripe fruit that has been bottled or packaged with no form of preservation being used other than refrigeration. This type of fresh juice is normally sold in markets not too distant from the producer. Apple juice has been treated by some method to prevent spoilage. Shelf-stable or processed apple juice can be natural juice, clarified juice, crushed juice or frozen apple concentrate. (HUİ ansiklopedi) Natural juice comes from the press and generally only ascorbic acid is added to preserve color. It is then bottled and heat processed. Some forms of natural apple juice are produced with the use of heat pasteurization only. Apple juice production begins with fruit harvesting, transport and washing facilities. However, all fruit must be sound and free from gross damage or contamination. In particular, it should be free from mould or rot which can lead to tainted juices and microbiological instability. Product quality and stability will be influenced by the cleanliness of the ingredients and sanitation in the processing plant. Most fruits accumulate some dust in the field or during trasportation. They should be rinsed thoroughly by sprays of water before crushing.(Macrae and fri.) The fruit should be picked at the proper stage of maturity for the preparation of juice. The flavour, sugar content and pectin levels of the juice will vary with the maturity of the fruit. Ideally, fruit should have been picked when fully ripe, with dark brown seeds and no residual starch as detected by an iodine test. Fruit which is picked slightly under-ripe for the dessert market or for controlled atmosphere storage should therefore be allowed to mature for a few days at ambient temperature before pressing.(Hicks) A diagram depicting the processing steps for apple juice and juice concentrate is shown in figure ….. . Since apple juice concentrate is so widely available, it is relatively easy to set specifications for a juice in terms of its sugar and acid levels and to ensure consistency by blending different concentrates with water or fresh juice to required spesification. The blending and dilution of concentrates must be carried out before final filtration or the juice may become turbid on storage. The aroma essence, however, should be dosed into the juice line after the final mixing and filtration stages, to avoid losses by evaporation and adsorption by filter aids which have a high affinity for many of the small polar molecules which are responsible for volatile flavour. How much of water do we need for the food production?
How much water is needed to produce our food? All the food from crop and livestock production, inland fisheries or aquaculture, forest products, requires water. This water comes from rain and moisture stored in soils (green water) or from withdrawals in watercourses, wetlands, lakes and aquifers (blue water). 70% of the blue water withdrawals at global level go to irrigation. Irrigated agriculture represents 20% of the total cultivated land but contributes 40% of the total food produced worldwide. It takes about 1500 liters of water to produce 1 kg of wheat, but it takes 10 times more to produce 1kg of beef! Producing feed crops for livestock, slaughtering and the processing of meat, milk and other dairy products also require large quantities of water. This makes the water footprint of animal products particularly important. Fish production from rivers and, increasingly, from aquaculture contribute about 25% to the world's fish production and aquaculture is the fastest growing food producing sector: the average annual per capita supply of fish from aquaculture has increased at an average rate of 6.6% per year between 1970 and 2008. Both fisheries and aquaculture require a certain quantity and quality of water in rivers, wetlands, lakes and estuaries and are therefore important water users. All human activities use water: drinking, cooking, washing, but also and mostly, for producing food, paper, clothes, etc. The water footprint is a way of measuring our direct and indirect water use. Jordyn from Onehunga High School likes to learn new things so investigating the role of a production worker in the bottling industry at Frucor is a great opportunity for her. Production workers in the food and beverage industry prepare ingredients, operate machinery and bottle or package products. At Frucor in Manukau, Jordyn follows through the process of firstly preparing and creating the drink to be packaged and then observing how it's canned and readied for distribution. It's not long before she's weighing ingredients and putting them into the large mixing tank. Luckily, when she's told the many packages of ingredients need to be added, she's given a helping hand. As the day progresses, Jordyn learns about the filling room where 400 cans every minute are filled, the quality control on both product and cans and takes a taste test. Taste testing is part of the training and Jordyn's taste buds are certainly finely tuned when she picks up the new batch tastes slightly different to the sample product. Once the quality is assured, it's time for the robots to take over and complete the packaging process. Nondestructive quality evaluation of fruits is important and very vital for the food and agricultural industry. The fruits in the market should satisfy the consumer preferences. Traditionally grading of fruits is performed primarily by visual inspection using size as a particular quality attribute. Image processing offers solution for automated fruit size grading to provide accurate, reliable, consistent and quantitative information apart from handling large volumes, which may not be achieved by employing human graders. This project presents a fruit size detecting and grading system based on image processing. The early assessment of fruit quality requires new tools for size and color measurement. After capturing the fruit side view image, some fruit characters is extracted by using detecting algorithms. According to these characters, grading is realized. Experiments show that this embedded grading system has the advantage of high accuracy of grading, high speed and low cost. It will have a good prospect of application in fruit quality detecting and grading areas. In order to improving fruits’ quality and production efficiency, reduce labor intensity, it is necessary to research nondestructive automatic detection technology. Fruit nondestructive detection is the process of detecting fruits’ inside and outside quality without any damage, using some detecting technology to make evaluation according some standard rules. Nowadays, the quality of fruit shape, default, color and size and so on cannot evaluated on line by the traditional methods. With the development of image processing technology and computer software and hardware, it becomes more attractive to detect fruits’ quality by using vision detecting technology. At present, most existing fruit quality detecting and grading system have the disadvantage of low efficiency, low speed of grading, high cost and complexity. So it is significant to develop high speed and low cost fruit size detecting and grading system. Here two choices are provided for grading either by color and size. In first case we are going to sort circular shaped fruits according color and grading is done according to size. The proposed automated classification and grading system is designed to combine three processes such as feature extraction, sorting according to color and grading according to size. Software development is highly important in this color classification system and for finding size of a fruit. A quality failure, a bad product that a customer experiences, if it gets tweeted or facebooked that reputation can be gone in an instant. So to mitigate against that it's important that there are effective quality processes throughout the business. The sort of controls that you can put in place are things like supplier audits to ensure that you are conducting thorough research into each suppler, to make sure they are coming up to the qualities that you actually need for your ingredients and raw materials. Also putting the quality procedure fully in place to help the full manufacturing cycle to ensure that the right quality steps are recorded at the right points in time and you've got proof of evidence that you have conducted those tests. It's also important to have an effective way of actually handling any customer complaints, dealing with them effectively and quickly to ensure that you respond in a timely manner. To give you an example, meat producers when they receive the materials in, when they receive the actual cuts of meat they need to ensure that the temperature is correct, that the vehicle is clean and there is the appropriate documentation. And that information needs to follow that cut of meat through the entire process to the end article that is actually manufactured, be it a ready meal or a cut of meat or whatever. So you need to have effective processes in place that actually allow you to drill into the information that you have recorded. Often food production environments are dirty and unpleasant environments to be working in. To actually use paper for that method is introducing risk to the recording of quality information. If you can get that information effectively into the system, you've got it, its captured, you can always go back to it and there isn't the risk of losing the documentation that you took the time to actually capture."

These guidelines provide minimum requirements that a pharmaceutical or a food product manufacturer must meet to assure that the products are of high quality and do not pose any risk to the consumer or public. Good manufacturing practices, along with good agricultural practices, good laboratory practices and good clinical practices, are overseen by regulatory agencies in the United States, Canada, Europe, China, and other countries. Good manufacturing practice guidelines provide guidance for manufacturing, testing, and quality assurance in order to ensure that a food or drug product is safe for human consumption. Many countries have legislated that food and pharmaceutical and medical device manufacturers follow GMP procedures and create their own GMP guidelines that correspond with their legislation. All guidelines follow a few basic principles: Manufacturing facilities must maintain a clean and hygienic manufacturing area. The distribution of the food or drugs minimizes any risk to their quality. A system is available for recalling any batch from sale or supply. Complaints about marketed products are examined, the causes of quality defects are investigated, and appropriate measures are taken with respect to the defective products and to prevent recurrence. Practices are recommended with the goal of safeguarding the health of consumers and patients as well as producing good quality food, medicine, medical devices, or active pharmaceutical products. In the United States, a food or drug may be deemed "adulterated" if it has passed all of the specifications tests, but is found to be manufactured in a facility or condition which violates or does not comply with current good manufacturing guideline. The food industry is full of regulations and laws for a simple reason – if the quality of the product drops, then consumers could face a serious health risk. It seems in recent years that food manufacturers are developing more and more new deep-fried products. From french fries to spring rolls, there is little that doesn't go into a deep fryer these days. With so much food being cooked in oil, it does pose a question about how often that oil should be changed and how to identify when the quality decreases. How can cooking oil go off? Cooking oil, like most ingredients, becomes rancid in a number of situations that can cause the quality of the cooking and the product to decrease. Simply leaving the oil at room temperature will lead it to go off over time. The quality can also decrease because of how hot the fryer is set at and what type of food is being fried. Scientifically, this is referred to as thermal oxidative modification. This is measured by looking at the number of polar components present - a high level indicates the oil has been used frequently. How can industry avoid this situation? Assessing the quality of cooking oil can be done on a judgement basis as most industry professionals can accurately tell when the quality begins to decrease. However, this can miss some important information that a tool can provide. The testo 270 Cooking oil tester is a good example of an electronic hand-held instrument that food manufacturers can use on a daily basis. By simply dipping the tester into the oil, the amount of polar components is measured and displayed on the screen. If the polar component amount increases past a certain level, an alarm is activated to alert manufactures to change the oil. Also featured on the screen is the actual oil temperature, which is an important factor to measure to ensure food is cooked thoroughly.
