Sea cucumber has been used in traditional Chinese medicine for hundreds of years, but they are relatively obscure in the U.S. This may be soon changing, however, as evidence mounts that sea cucumber extracts can kill cancer cells while stimulating the immune system. As reported by Ethan Evers, author of “The Eden Prescription, previous research on sea cucumber has demonstrated its ability to kill lung, breast, prostate, skin, colon, pancreatic, and liver cancer cells. These extracts have also proven effective in killing leukemia and gioblastoma cells. Looks like we can add yet another food to the list of anti-cancer foods.

Sea cucumbers are echinoderms from the class Holothuroidea. They are marine animals with a leathery skin and an elongated body containing a single, branched gonad. Sea cucumbers are found on the sea floor worldwide. The number of holothurian (/ˌhɒləˈθjʊəriən, ˌhoʊ-, -ˈθʊər-/[2][3]) species worldwide is about 1,717[4] with the greatest number being in the Asia Pacific region.[5] Many of these are gathered for human consumption and some species are cultivated in aquaculture systems. The harvested product is variously referred to as trepang, bêche-de-mer or balate. Sea cucumbers serve a useful role in the marine ecosystem as they help recycle nutrients, breaking down detritus and other organic matter after which bacteria can continue the degradation process.[5] Like all echinoderms, sea cucumbers have an endoskeleton just below the skin, calcified structures that are usually reduced to isolated microscopic ossicles (or sclerietes) joined by connective tissue. In some species these can sometimes be enlarged to flattened plates, forming an armour. In pelagic species such as Pelagothuria natatrix (Order Elasipodida, family Pelagothuriidae), the skeleton is absent and there is no calcareous ring.[6] The sea cucumbers are named after their resemblance to the fruit of the cucumber plant.

Virtually everyone is familiar with the sea star, an animal which is a member of the phylum of invertebrates known as Echinoderms, meaning “spiny skin.” Other Echinoderms include the sea urchins and the feather stars. The sea cucumber is another echinoderm—hard to believe since most of them don’t have very spiny skin at all. But the sea cucumbers are most closely related to sea urchins! There are over 1700 species of sea cucumbers in the world’s oceans, and it’s not hard to guess how they got their name. Most are about the size and shape of a large cucumber. But the similarity to a vegetable ends there! Sea cucumbers have tiny tube feet like sea stars and sea urchins. They can move around, albeit somewhat slowly. There are two basic ways in which sea cucumbers feed. The plankton-feeders extend feathery tentacles into the water as a net for passing plankton. The sticky tentacles gather up particles, then one by one, the sea cucumber licks the plankton off each tentacle with a centrally-located mouth. In the rich waters of New England, an Orange-footed sea cucumber feeds on plankton soup. If I tickle its tentacles, the sea cucumber withdraws them for protection. Other species of sea cucumbers feed by digging though the sediments on the sea floor looking for decaying particles. They typically eat a bunch of sand in the process, which passes completely through their digestive tract. It’s a slow process, but seen in a time lapse, a Tiger tail sea cucumber covers a lot of ground looking for food. You might think that an animal like this would be defenseless, but in fact many sea cucumbers possess a fascinating defense mechanism. When threatened, they can eject a sticky goop called cuvierian tubules to ensnare predators. Others can expel poisonous chemicals to drive predators away. As a result, very few animals will dare to attack sea cucumbers. Due to that general lack of predators, sea cucumbers make a safe home for symbiotic partners. An Emperor shrimp lives in safety on a sea cucumber and in exchange for the protection, keeps its host free of parasites. But of course, there are a few predators that can handle the sea cucumber’s defenses. In the north Pacific, Giant Sun stars will attack and eat sea cucumbers. And in the south pacific, a large snail known as a Partridge Tun specializes in eating sea cucumbers using a powerful venom to subdue its victim. The Echinoderms are a diverse and interesting group of animals, with the sea cucumber as its strangest and possibly most fascinating member.

Processing sea cucumbers into beche-de-mer: a 'how to' training video

This is a training video made for Pacific Island artisanal fishers. It shows methods for postharvest processing of sea cucumbers. The video was produced as part of a research aid project funded by the Australian Centre for International Agricultural Research (ACIAR project FIS-2010-096), within the Department of Foreign Affairs, Australia. Hard copies (DVD discs) with voice-overs in local languages will be distributed to coastal villages in Fiji, Tonga and Kiribati. Sea cucumbers have been fished in the Pacific Islands for more than 150 years. They are processed, using artisanal methods, into a dried form called bêche-de-mer and exported to China. Harvesting and selling sea cucumbers gives rural households vital sources of income for basic needs, health and education. In many Pacific Island villages, alternative livelihood activities are limited and fishing sea cucumbers offers one of the few income sources. Research shows that a majority of Pacific Island fishers have had no information support to understand how to process the animals correctly. As a result, the quality of dried products is often poor and fishers get inferior prices. This problem contributes to a need to fish large quantities of sea cucumbers to meet economic needs and wastes the potential value of these resources for national economies. The goal of the video is to help Pacific Island fishers to make better income from the sea cucumbers that they collect and reduce the wastage of potential income and food from these aquatic resources. The video and project discourages excessive fishing, since these resources are vulnerable to over-exploitation, and we do not encourage fishers to harvest sea cucumbers. Rather, the project hopes to improve postharvest processing of catches that would be made by existing fishers. By spending more time on value-adding of the fishery harvests and gaining a better income from selling the dried sea cucumbers for export, fishers might need to fish less frequently. Whether, or not, this occurs is being determined by 'before-and-after' socio-economic surveys as part of the research component of the project. The video was made by Southern Cross University, Australia, through its National Marine Science Centre. Neither the funding organisation, commissioned organisation nor partner organisations that produced this DVD have any financial gain or commercial interests in the sea cucumber industry. This recipe is for sea cucumber soup. Sea cucumber is an ocean creature that has the shape of the vegetable cucumber. This sea cucumber soup is delicious, made with chicken, Chinese mushrooms, garlic and ginger. Sea cucumbers cost between $30 to $100 a lb., so you can save a lot of money making this delicious and healthy soup. Enjoy! Check out the recipe below: Chinese Sea Cucumber Soup 6 small sea cucumbers 1/4 chicken 5 to 6 slices ginger (2tablespoons) 6 to 8 cloves garlic 3 cups water 1 teaspoon salt Soak 6 small sea cucumbers in water for 1 day. Split the sea cucumbers length wise and scrape out the guts with a knife. Also scrape the surface of the sea cucumbers with a knife. Put the sea cucumbers in a container for 10 days, rinsing them and changing the water every day. On the day of making the soup, give the sea cucumbers one last rinse. Cut them length wise and then quarter them. Cut the chicken into bite size pieces and include the bones for the soup. Cut the skin from the ginger and cut into small pieces. Remove skin from garlic and leave them in fairly large pieces. Measure 3 cups of water in a soup pot and bring to a boil. Put the chicken, ginger and garlic into the pot. Cover with a lid and cook soup for 30 minutes at medium heat. The cooking time for sea cucumber varies. These small sea cucumbers take between 20 to 30 minutes cooking time. Large sea cucumbers may take much longer to cook. Just before serving this soup, add the salt. I hope you enjoy this soup. It's suppose to be good for you too.

Length - 30cm Depth - 0-40m Widespread Indo-Pacific When feeding they fan out their "arms" and then one by one roll them in into their mouths to feed. Some sea cucumbers crawl around on the bottom slowly filtering sand through their tentacles to gather food, while others spread their tentacles above them to capture plankton. A number of sea cucumbers feed nocturnally while others feed by day. There are sea cucumbers that hardly move while others are more active often perching on tall sponges to feed. Sea cucumbers often attract hitch-hikers like shrimps and crabs that crawl over their skin, also pearlfish that enter via their anus. As a means of defence sea cucumbers can expel their intestines or respiratory organs in the form of sticky threads, but these can quickly regenerate. Juveniles often mimic sea slugs. Some types of sea cucumbers are edible and considered a delicacy in the Far East countries.

As a defense mechanism a sea cucumber will shoot part of its resperatory system out of its body when bothered. Fish will go after the guts and give the cucumber time to scoot away and live another day. Our dive guide, unprompted, poked the cucumber a bit to demonstrate. Since nothing was around to eat its guts, it quickly sucked them back in. Kind of gross but fascinating, and not harmful to the sea cucumber in the end. A very alien world down under the sea, especially at night. NOTE: I did not touch this sea cucumber, nor ever ask our Japanese dive guide to do so (I doubt this is something that would be tolerated by Western divers, and dive guides in the US would never do such a thing, but maybe in remote parts of Japan they have a different relationship with sea creatures?). I would never bother an animal like this, but it happened quickly, underwater had no easy way to communicate with the dive guide, and it was pretty fascinating.

They have been identified as Paul Henry, Marcus Mason, Steven Stephens, Fitzroy Coleman and Aundrey Watson all of Clarendon addresses.
