Ep. 96 - Looking for a delicious filling for a GRILLED PANINI SANDWICH? Here’s Nik’s favourite, along with ideas for more. Now let’s get grilling! Sandwiches have long been my go-to when I’m pressed for time. As long as there’s some sort of bread within reach, I’m game to hunt through the cupboard or fridge and gather a bunch of ingredients to create a fabulous sandwich. My enjoyment of homemade sandwiches increased significantly when friends gifted us with a panini maker. I suddenly realized I could make exceptionally delicious creations that have a signature crispy outside with each bite, followed by the warmed inside finish. If you don’t have a panini maker, fear not; you can make these creations in a skillet on the stove top. If you’re so inclined to purchase one, I’ve listed a bunch of panini makers that I’ve tested and had great results with in the Amazon links below. On to my favourite GRILLED PANINI SANDWICH combinations: NIK’S FAVOURITE – As featured in this story! Stonemill’s Sprouted 3-Grain bread, Edam cheese, sliced turkey, tomato, avocado, alfalfa sprouts and a pesto mayonnaise. Butter the outside of the bread to heighten the flavour of the crispy grilled bread. CAPRESE – A 6-inch square of Italian focaccia bread sliced in half. Brush the insides with herbed oil, then add a layer of thin-sliced tomato, buffala mozzarella, fresh basil leaves and baby arugula tossed in olive oil and balsamic vinegar. Finish with salt and pepper and grill until the outside is crunchy. FRENCH TWIST – A 7-inch piece of French baguette cut in half. Butter the halves before spreading with a Pommery whole-grain mustard. Thin slices of country pâté, slices of fresh apricot and a light sprinkling of sautéed shallots. Compress the sandwich down while grilling and serve with cornichons and pickled onions. PBBAJ CLUB – Using your favourite sliced or artisanal bread, butter the outside and sprinkle with cinnamon and sugar. Spread some peanut butter and jam on the flip side of each. Add sliced banana on one piece and sliced apple on the other. Put an additional piece of bread between the two when you close it up and grill that club - the outside should caramelize a bit! Tons of options, but no disputing the fact that a GRILLED PANINI SANDWICH is all about the maker! Create your own masterpiece today! Enjoy! David's Recipes - how to make a Panini, easy lunch ideas Take all the flavors of a classic Caprese Salad and transform them into a great sandwich. Find More of David’s Recipes: http://qvc.co/FindDavidsRecipes Caprese Panini Serves 4 Ingredients: • 3 cups lightly packed fresh basil leaves • 1 garlic clove • 2 oz fresh Parmesan cheese, cut into 1/2" pieces • 1/4 tsp salt • 1/2 tsp ground black pepper • 1/3 cup extra virgin olive oil • 8 slices Italian country-style bread, sliced 1/2" thick • 2 vine-ripened tomatoes, thinly sliced • 12 oz fresh Mozzarella cheese, sliced • Oil cooking spray Preparation: Place the basil, garlic, Parmesan pieces, salt, and pepper into a food processor and pulse 5–6 times. While the machine is running, slowly add the olive oil in a steady small stream until fully incorporated. If needed, occasionally stop to scrape down the sides of the container. Place the mixture into an airtight container and refrigerate until needed. To assemble the sandwiches, coat 1 side of each bread slice with cooking spray. Place the bread slices on a clean work surface, oiled-sides down. Spread the basil mixture on the inside of all 8 slices. Evenly distribute the tomatoes and Mozzarella cheese on 4 of the bread slices. Cover with the other 4 bread slices, oiled-sides up, and press together gently. To make the paninis, preheat a press or set a large grill pan over medium heat. Cook the sandwiches for 5–7 minutes, or until golden brown and the cheese is melted. If using a grill pan, be sure to flip the sandwich. Serve immediately. To me a Caprese Salad is the perfect dish. It’s simple, colorful and really flavorful. Now, when I serve this salad to my guests, I serve it with a little crust of bread. So I got to thinking, what if we took all the flavors and ingredients of a Caprese Salad and turned it into a panini. It’s really simple, let me show you how. The key to making a great sandwich is using the freshest possible ingredients. Splurge a bit on the mozzarella and parmesan. And if you can taste those vine ripened tomatoes first, that’s not an unusual thing to do at a farmer’s market, you’ll thank yourself with every bite of this panini. Be sure to pair this sandwich with a soup or salad. You could try my Cream of Asparagus Soup or my Grilled Corn Salad. Slit a hot dog roll horizontally using a sharp knife. Place the hot dog on a clean dry surface and apply ½ tsp of olive oil evenly on both the inner sides of the roll. 2. Spread 1 tbsp of the cream cheese mixture on each side of the hot dog roll. 3. Close the hot dog roll and spread 1 tsp of butter evenly on top of it. Place it in a greased pre-heated sandwich griller and grill for 5 minutes or till it turns crispy and brown from both the sides. 4. Repeat steps 1 to 3 to make 4 more paninis. 5. Cut each panini diagonally into 2 equal pieces. Serve immediately.

Bring the dough into the shape of a log so that its easy for us to divide them into equal pieces.This recipe is enough for making 6 panini breads. Shape them either oval or rectangular.Place it on to a baking sheet lined with parchment paper. 3.Proof them for 2 hours. Cover the shaped dough, with a plastic film or with a damp cloth and keep it in a warm environment for 2 hours. 4.Bake the bread. For baking Paninin bread we need a lower temperature than a regular bread.we want our bread to get cooked completely but at the same time we don't want that golden color on the bread.So bake at 350/375 F for 20-22 minutes. Let the bread cool down completely and if you want to store them for later,wrap tightly with a parchment paper and then keep it inside a ziplock bag and then keep it inside the freezer. We can make this easy panini bread in very little time and this bread is so tasty :)

Build tools like Gulp and package managers like npm give you the tools to automate tasks which saves time and reduces mistakes. When we launched Foundation 6, we open-sourced a set of build tools that we use here at ZURB code client projects called the ZURB Stack. In other words, it’s basically a way for users of Foundation to use the same tools that ZURB uses to deliver front-end code to clients. We accomplish this through the Gulp task runner and also by using a custom templating engine we wrote called, Panini. Panini is a custom built, light-weight static site generator that works as a plugin to Gulp. Together the two form a delicious-build system. This is an introductory lesson in a series on Panini. Shop this recipe: http://store.colavita.com/ For more panini recipes and inspiration, check out https://colavitarecipes.com/ Roasted Vegetable Panini Prep Time: 20 minutes Cook Time: 28 minutes Ingredients: Serves 4 1 multigrain boule 1 medium eggplant, sliced into 1/4dz thick slices and roasted 2 large red peppers, roasted (roast your own – instructions below – or buy pre-roasted peppers at your grocery store) 2 large zucchini, sliced into 1/4dz slices and roasted 1 lb smoked mozzarella cheese 1 jar Black Olive Paté Colavita Extra Virgin Olive Oil Pinch of sea salt Instructions: First roast the eggplant and the zucchini. Heat your oven to 425°F. Line a baking sheet lined with parchment paper. Drizzle the sliced vegetables with Colavita Olive Oil and sprinkle with sea salt. Roast them in the oven until soft, about 20 minutes, flipping them with metal tongs halfway through the cooking process. Remove from the oven and allow to cool. Slice the multigrain boule into slices about 3/4 Dz thick. Spread Colavita Black Olive Paté onto the inside of each bread slice. Use about 1 tablespoon per slice. Place roasted zucchini and eggplant on top of the paté on one slice of bread. Layer the roasted peppers on top. Then add about 2-3 slices of smoked mozzarella on top of the peppers. Place the other slice of bread, paté side down, on top of the veggies. Brush both outer-facing sides of the Panini with Colavita Olive Oil. Repeat with the remaining bread slices. Pear, Prosciutto and Pecorino Panini Prep Time: 15 minutes Cook Time: 8 minutes Serves 4 4 ciabatta rolls, sliced in half 2 Bosc pears, thinly sliced ½ lb Pecorino cheese, thinly sliced 8 slices prosciutto (2 per panino) Colavita Extra Virgin Olive Oil Colavita Balsamic Glace Instructions: Slice your bread lengthwise. Then cut it horizontally (if you’re one long ciabatta loaf) so that each segment is about 6dz long. Place 3-4 Pecorino cheese slices on one slice of ciabatta. Layer about 2 slices of prosciutto slices on top of the cheese. Add about 3-4 slices of pear on top of the prosciutto. Drizzle some Colavita Balsamic Glace on one side of the other slice of bread. Then place this slice, glace side down, on top of the pears. Brush both outer-facing sides of the Panini with Colavita Olive Oil. Repeat with the remaining bread slices. Tomato, Mozzarella and Pesto Panini Prep Time: 15 minutes Cook Time: 8 minutes Ingredients: Serves 4 1 or 2 baguettes cut into 6dz long segments 1 lb mozzarella cheese, thinly sliced 3 medium tomatoes, sliced ¼dz thick Colavita Pesto Sauce – about 2 tablespoons per panino Colavita Extra Virgin Olive Oil Instructions: Slice your bread lengthwise. Then cut it horizontally so that each segment is about 6dz long. Spread about 1 tablespoon of Colavita Pesto each one side of each of the slices of bread. Place about 2-3 slices of mozzarella cheese on top of the pesto on one slice of the bread. Add about 3-4 slices of tomato on top of the cheese. Place the other slice of bread, pesto side down, on top of the cheese. Brush both outer-facing sides of the Panini with Colavita Olive Oil. Repeat with the remaining bread slices. Pressing Instructions: Heat 1 tablespoon of Colavita Olive Oil in a large skillet or grill pan over medium heat. Add your prepped panini, then press a heavy pan (like a cast-iron skillet or a panini press) on top to weigh it down. Cook until golden and crisp, 3 to 4 minutes per side. Use a spatula and an oven mitt to safely flip the panini to the other side. You can also use a fancy panini press, should you own one. A few tips: Bread: Dense bread is best because the pressing part of the panini process really does compress everything together. Choose breads that have some heft to them. Our favorites are baguettes, ciabatta rolls, thick cut multi-grain loaves, and of course, focaccia. Grilling tips: A grill pan is best because it will give you the signature grill lines characteristic of panini sandwiches. If a grill pan is not available, you can use a cast iron skillet, but you’ll have to give up on your dreams of grill lines...unless you want to draw them in later. You can press the panini down with another skillet, or a panini press. You don’t need that much force here—you don’t want to squeeze the filling right out of the bread! Use a spatula to lift and flip. And have an oven mitt and a plate ready. If you have a panini press (like a waffle iron for sandwiches), you can use that and eliminate any flipping or guess work. We, at Colavita, like a little mystery, so we keep it real with the grill pan. Finally, no ones likes a soggy sandwich. So make sure to drain veggies like fresh tomatoes, or water-packed cheese that can soak up into the bread creating a sponge.

Crave-Worthy Fried Egg Sandwich | Food Network
Claire puts her own spin on Eggslut's bacon, egg and cheese breakfast sandwich. Get the recipe: http://www.foodnetwork.com/recipes/fried-egg-sandwich.html Fried Egg Sandwich Recipe courtesy of Claire Thomas Total: 20 min Active: 20 min Yield: 1 serving Level: Easy Ingredients 1 tablespoon ketchup 1/2 teaspoon chipotle in adobo sauce 2 slices sourdough bread 2 slices Cheddar 1 tablespoon unsalted butter 1 slice bacon, halved 1 egg Directions Combine the ketchup and chipotle and spread on the inside of each piece of bread. Place the cheese between the bread at an angle so that the edges hangover the sides of the bread. Butter the outside of one bread slice with half the butter. Heat a skillet over medium heat. Press the sandwich on, buttered-side down. Press until the bread is golden brown and the cheese has started to melt. Butter the other side (which is facing up) with the remaining butter and flip. Cook until golden brown and the cheese is gooey, this should all take 3 to 4 minutes. Remove the sandwich from the heat and hold. Meanwhile, in a pan over medium heat, cook the bacon until barely crisp, about 5 minutes. Flip the bacon, pushing the two pieces next to each other to form a square. Crack the egg on top, cooking into the bacon. Continue cooking until the egg is set, about 5 minutes. Open up the sandwich (use a spoon to help pull apart the bread) and slide in the eggs and bacon. How to Make Hash Browns - Diner Style Restaurant Hashbrown Recipe
Learn how to make crispy hashbrowns just like you get at a diner! These are super simple and only require a real potato, butter, oil and a technique. That's it. Enjoy! For one serving of hash browns: 1 (4-5 ounce or 110-140 grams) russet potato 2 Tbsp vegetable oil 1/2 Tbsp butter or margarine Wash and peel the potato. Grate or shred on a box grater or food processor. Do so into a bowl of water to prevent oxidation. Drain and rinse until water runs clear. Spread shredded potato out onto paper towels or a clean kitchen towel. Pat dry and let air dry for 5-10 minutes. In a small frying pan, add oil and butter. Heat over medium-medium high heat. When butter solids start to brown, add shredded potatoes. Cover with a lid and cook for 5 minutes without lifting the lid. When time is up, remove lid, season with salt and pepper and flip. Continue cooking for an additional 1-2 minutes. Makes 1 serving of hashbrowns. Enjoy! I'm Sonia from GialloZafferano and today we'll be making "Panini al Latte". These rolls are delicious, soft morsels which can be filled with either sweet or savoury ingredients. You can even prepare them the day before; they're enjoyed by adults and kids alike and they're perfect for bringing on a picnic or a day outdoors. Are you ready? Let's see what ingredients we'll need. • 1 1/4 - 1 1/3 cups of fresh whole milk • 5 Tbsp of sugar • 1 packet of yeast: this one is a quarter ounce • Half tablespoon of salt • 3 and a half tablespoons of softened butter • 4 cups of strong flour or flour for breadmaking • A small cup of flour and an egg for washing the finished dough. OK. Let's take a look at how to prepare our rolls. First of all, place the dry yeast into a small bowl. We'll need to moisten and feed the yeast to activate fermentation. To do this, put one or two spoons of sugar into the yeast (whichever you'd like) and add a bit of the milk which at this point must be at least 95F which is just warm. Not hot, and not cold. Add a bit of milk, and then mix together. After a while, you may see a bit of foam at the top of the mix...this is the fermentation process at work! Add the rest of the sugar to the rest of the milk and add the salt as well. Mix it all together well. In this bowl, I've placed the flour and formed an indentation into which I've poured the yeast mixture and the other milk mixture. In the meantime I've melted the butter and now I'll add this to the bowl and form it into a dough. When you've formed the dough into a ball in the bowl, turn it out onto a worktop and knead it for at least 15 minutes. The dough needs to be soft and elastic but not sticky. You can also do this in a mixer with a bread hook attachment. Here we are. Once the ingredients are all incorporated, sprinkle a worktop with a bit of flour. Use as little flour as possible and begin to knead the dough. Once the dough is smooth and unified, place it into a bowl (preferably glass) and cover with plastic wrap and leave it to rise for at least two hours or until it's doubled in size. And here's our lovely risen dough. Now, remove the plastic wrap, turn the dough out onto a worktop, and begin to work it into shape. Remember to only use a bit of flour if you find the dough is tacky. Work the dough into a tube. From this shape you can cut the individual rolls in pieces of about an ounce each. Here are the formed rolls. You can see I've cut the pieces from the tube in pieces of about an ounce each. If you want, you can weigh them for accuracy. If you've cut one too big, just cut it back to size and work the excess back into the tube for the next one. Now, take a little piece and work it by folding the edges of the piece in towards the center forming a ball. Then pinch the center bit together to fuse all the folds to each other. Turn the roll so the pinched part is facing down onto a baking sheet covered with parchment paper. Then coat the rolls in a wash of room temperature milk and leave the rolls to rise for another half hour or until they've doubled in size. Once they've doubled, whisk an egg in a small bowl and give an egg wash to each of the rolls before baking. After this we're ready to bake our rolls for about 18 minutes in an oven set to 425F or until the rolls are golden brown. And finally, here are our lovely Panini al Latte.
